We should first know that eggs are very temperamental ingredients when making omelets. It is important that eggs are fresh from an organic market and kept cool until used. If they are not kept cold enough, the whites won’t form properly. The yolks will also break down too quickly and become runny. This will make your omelets appear strangely colored. If you plan to cook the eggs right away, it is best to use room temperature eggs.

Another tip is to separate the egg before adding it to the pan. You don't want any white to get mixed up with the yolk because this could cause the omelet to curdle.

If you add the egg directly onto the stovetop, you might end up burning the bottom part of the egg, which would ruin the texture of your omelet. Instead, place the egg in the microwave for 10 second before you put it in the skillet. The microwave heat cooks the eggs just right without overcooking them.
