Omelets are one of my favorite foods to eat at breakfast. But how do you create them perfectly? Many different recipes and methods have failed to work for me. So I wanted to share some tips and tricks so that you can make delicious, fluffy omelets every morn.

First, eggs can be very temperamental ingredients for making omelets. Eggs must be purchased fresh, preferably organic, and kept chilled until ready for cooking. If you don't keep them cold enough, the whites won't form properly, and the yolks will break down too much and become runny. This causes your omelets to look oddly colored. If you're going to cook them immediately, it is best if the eggs are still warm.

You might also try separating the egg before adding to the pan. You don't want any white to get mixed up with the yolk because this could cause the omelet to curdle.

If you add the egg directly onto the stovetop, you might end up burning the bottom part of the egg, which would ruin the texture of your omelet. Instead, microwave the egg for 10 seconds before adding it to the pan. The microwave heat cooks the eggs just right without overcooking them.

Once the omelet forms, cover the pan again. Let the top side set completely. Flip the omelet upside down or with a spatula. Cook the opposite side for another minute. Serve immediately after removing the omelet from its pan.

This recipe works best with whole milk, but skimmed milk also works.
